Toreador isn't a bad choice for the priorities you've laid out, but nothing to say that you can't have a talkative and sneaky Tremere. It only really comes down to which disciplines you want to use. It is developed by Troika Games and published by Activision.

Honestly, it doesn't really matter which clan you pick (outside of Nosferatu and Malk) in terms of your build. Introduction Vampire: The Masquerade Bloodlines is a role-playing action game and presented from the first or third-person perspective. I made that mistake once, but as long as you're keeping up in disciplines or dropping the occasional point in your preferred fighting feat, you're good to go.

The game's last third focuses heavily on combat, and it can be very difficult if you've been playing a social/sneak character. That's not a bad series of progression in terms of stats, but make sure to keep up in terms of combat. I played the game through without the unofficial patch, then with the patch, then with the plus patch, and I can definitely say that having the patch makes a big difference in terms of not only avoiding quest breaking glitches, but the plus patch also restores some quests and changes some items around.
